Grow something unusual and delicious in your veggie garden this year! You may not have tried Celeriac before, or even heard of it, but once you taste it, you’ll keep coming back for more. And if you’ve tried older varieties, you really owe it to yourself to grow and taste Monarch. It’s such an improvement that you’ll feel as though you’re growing a different veggie!
Celeriac is a tasty root vegetable with a flavor similar to celery. It can be diced or grated raw over salads, sliced and boiled, cut into strips for frying, or pureed with potatoes. And its celery-like flavor makes it a wonderful addition to soups and stews.
Monarch is easier to grow than celery, producing large, firm, very smooth roots with creamy white flesh that remains white after blanching. It has a high tolerance for Celery Virus, is a good source of vitamin C, and has been given an RHS Award of Garden Merit.
Sow indoors at 70 to 75 degrees F in late winter to early spring. Place the seeds ¼-inch deep in seed flats, covering with starting medium and keeping the soil moist at all times. Germination should occur in about 3 weeks. In early summer, transplant the seedlings 12 inches apart in the sunny, well-worked garden, with 12 inches between the rows. Your Celeriac roots will be ready to harvest in the fall to early winter — they will be at least the size of a tennis ball! Pkt is 200 seeds.
