The dramatic magenta-violet color of this superb beet is your first hint that you are in for quite a treat! Wonderfully flavorful, with an old-fashioned rich bite and succulent texture, Moulin Rouge Hybrid is a gourmet variety you will love either as a baby veggie or a mature root. It’s a must-grow for beet lovers and beet-a-phobes alike!
These deep purple roots can be harvested at just 1 inch in diameter (about a month after sowing) for tender, sweet baby veggies, along with the young purple-stemmed green leaves. Or they can be allowed to mature to full size and pulled 2 months after sowing, when their tops have reached about 10 to 12 inches high and spread 5 to 8 inches wide. One method we love is planting the seed just 4 inches apart, then “thinning” the young plants by pulling every other one 35 to 40 days after sowing for baby beets and greens.
Moulin Rouge looks as good on the plate as it tastes, with a deep, strong flavor hard to find in supermarket beets. It’s ideal for canning, too, being quite uniform in size. Even the leaves are attractive, with violet midribs and veins.
Beets are a cool-weather crop, suitable for spring, fall, and even winter in very mild climates. They tolerate a bit of frost without damage. Direct-sow the seeds as soon as the soil can be worked in spring, or in late summer to early fall. Bush beans, lettuce, and onions are good companions in the vegetable garden, as are all the Brassica family, from broccoli and cabbage to kohlrabi and cauliflower. And if you do not care for the flavor of beet greens, be sure to chop them and plow them back into the soil, where they add valuable nutrients that will enhance next year’s crops.
For full-size beets, space plants about 6 to 9 inches apart in full sun.
