The dark green, very curly sprouts can reach up to 8 inches high when grown as micro greens, packed with nutrition and flavor. This is the classic “cress” of egg-and-cress sandwiches, a mainstay of British high tea, and it is also delicious as an addition to salads, vegetable dishes, and savories. A member of the watercress and mustard family, this herb is best grown in soil or other non-water media; it will not do well in a sprouting jar.
